Ingredients and Method

The method involves thinly slicing and chopping the onion, peppers, jalapeño, garlic, and vine tomatoes, then sautéing them in a pan with olive oil. They then add in the spices, tomato paste, and n’duja, and cook until combined.
Cooking the Shakshuka
After adding in the tomatoes and seasoning with sea salt, the heat is lowered to medium and it cooks for 5 mins. Then, 150ml of water is added along with some thyme and it simmers for 20 mins with the lid on.
Once the sauce has thickened, a few small divots are made and the eggs are cracked in, seasoned and sprinkled over with some chives. The lid is covered and the eggs are left to cook for approximately 10 mins.
Finally, the lid is removed, the heat is turned off, and it is topped with crumbled feta and chopped parsley. It is served with toasted sourdough for a delicious and satisfying meal.
